  1. The pickled okra, cranberry sauce, and pie dough can be made a couple days ahead; the day before, pickle the shrimp and and boil the eggs for the deviled eggs.
  2. To save time, several of the side dishes can also be prepped the day ahead: Make the mac and cheese through step 3, reserving the bread crumbs; assemble the cornbread stuffing and pop it into the fridge; and roast the sweet potatoes for the casserole.
  3. If you're serving a big crowd, sometimes the white meat can go too quickly. To solve this problem, we've starting making a stuffed turkey breast roulade in addition to the whole turkey—this version, stuffed with boudin, goes great with the rest of the spread.
