Lime Rickey

A refreshing, non-alcoholic version of the classic cocktail, this lime rickey offers up a bit of sweet cold lime heaven. This recipe was shared with us by Tyla Fowler from NYC's Prune Restaurant.

Variation: Add 1/8 tsp. kosher salt to the lime wedges and sugar before muddling for a Sweet-Salty Lime Rickey

Ingredients

  • 12 lime, cut into quarters, plus 1 oz. fresh lime juice
  • 2 12 tbsp. sugar
  • 8 oz. club soda

Instructions

Step 1

Place lime wedges and sugar in a pint glass and using a muddler or wooden spoon, crush and stir until sugar dissolves. Fill glass with ice, add juice and club soda, and stir to combine.
