Togarashi Mayonnaise

Togarashi, a Japanese chile-based spice blend, heats up this mayonnaise. It's essential in Jose Garces' Roasted Duck Bao; but it's also great for kicking up any backyard burger.

  • 5 egg yolks
  • 34 cup vegetable oil
  • 1 Tbsp. fresh lime juice
  • 12 tsp. togarashi spice
  • Kosher salt, to taste

Instructions

Step 1

Combine egg yolks, lime juice, and salt in the bowl of a food processor and spin yolks until frothy, about 2–3 minutes. Slowly add vegetable oil until mixture is completely emulsified. Add togarashi spice, taste, and adjust seasoning. Store chilled until ready to use.
