Make These Kebabs to Fall in Love With Chicken Again

Mint and Aleppo chile make for a fast, crazy-good weeknight meal

Chicken's a weeknight standard for us, whether in a salad or as a hearty main dish, but all that ubiquity means we get tired of the bland-ish bird fast. Here's a way to fall in love all over again: kebabs coated in a spicy marinade of mint, Aleppo pepper, and Turkish sweet red pepper, a combination that is sure to keep you warm even as the weather cools down.

Make the marinade by mixing oil, mint, chile flakes, thyme, Aleppo pepper, tomato paste, red pepper paste, black pepper, and salt in a bowl. Add your chicken, then let it sit for about 30 minutes at room temperature. Next, heat up a grill and put your skewers on the hottest part. Turn them as needed until the chicken gets a nice char and is cooked through, which should be about 12 to 15 minutes. When you're done, you'll have delicious skewers and a new favorite way to eat an old standard.
