Ravigoté

Ravigoter means "to invigorate" in French, and indeed, this lightly acidic French sauce perks up the palate. This recipe first appeared in our April 2014 issue.

    makes 1 1/2 Cups

Ingredients

  • 13 cup sherry vinegar
  • 1 tbsp. Dijon mustard
  • 13 cup canola oil
  • 1 tsp. minced chive
  • 1 tsp. parsley
  • 1 tsp. tarragon
  • 2 cornichons, minced
  • 1 hard-boiled egg, minced
  • 14 shallot, minced
  • Kosher salt and freshly ground black pepper, to taste

Instructions

Step 1

Whisk sherry vinegar and Dijon mustard in a bowl; slowly whisk in canola and olive oils until emulsified. Fold in minced chive, parsley, tarragon, cornichons, egg, shallot, salt, and pepper.
