Ginger Syrup

Infused with ginger and black pepper, this syrup makes a great homemade ginger beer: Just mix one part syrup to three parts soda water. The result is spicy and fragrant, perfect on its own or in cocktails like the Kentucky Buck. This recipe first appeared in SAVEUR DRINK Issue #1 with the story "Nice Spice."

Ingredients

  • 1 (6") piece of ginger
  • 1 cup sugar
  • 1 cup water
  • 1 12 tsp. whole black peppercorns

Instructions

Step 1

Peel and thinly slice ginger; transfer to a 2-qt. saucepan. Add sugar, water, and peppercorns; boil. Reduce heat to medium; simmer until sugar is dissolved. Chill overnight, then strain into an 8-oz. glass jar.
