Roasted Almonds

These delicious nuts are well received at any party.

Ingredients

  • 8 tbsp. unsalted butter
  • 1 lb. raw almonds
  • Salt

Instructions

Step 1

Clarify butter by melting it in a pan over very low heat until almost all the sizzling noises have stopped and a white foam forms. Pour the clear yellow liquid butter through a tea strainer, and discard the milky solids. Set aside.

Step 2

Preheat oven to 375°. Bring a large pot of water to a boil. Drop in almonds and cook for 1 minute. Drain, then squeeze almonds out of their skins. This is painstaking work, but fun if you do it with company. Place them in a single layer on a cookie sheet.

Step 3

Drizzle with clarified butter and bake until lightly roasted, 10-15 minutes. Sprinkle with salt to taste.
