Cassava Crackers

You can buy prefried cassava crackers, but we prefer the superior flavor we get when we fry our own.

  • Serves

    makes About 30

Ingredients

  • 30 Unfried puffed cassava crackers (sold in packages of 30)

Instructions

Step 1

Pour vegetable oil into a wok or a medium heavy pot to a depth of 2" and heat over medium-high heat until temperature registers 375º on a candy thermometer. Add several cassava crackers at a time to the hot oil and fry them until puffed and pale golden, about 30 seconds. Let crackers drain on a metal rack (they will darken as they cool).
