The Black and Stormy

This recipe for a modified Dark and Stormy comes to us from the Cliff Restaurant in Barbados. The addition of fresh ginger juice to the drink provides a kick of clean heat for an especially invigorating cocktail.

Ingredients

  • 2 oz. Mount Gay Black Barrel rum
  • 1 oz. freshly squeezed lime juice
  • 1 oz. simple syrup
  • 1 oz. fresh ginger juice (blend clean ginger root with the same amount of water, then strain through a cheese cloth)
  • Good-quality ginger beer

Instructions

Step 1

Combine rum, lime juice, simple syrup and ginger juice in a mixing glass; set aside. Fill a highball glass with ice and add rum and syrup mixture. Top off with ginger beer and stir before serving.
