Chocolate-Dipped Pistachio Toffee

I grew up in Charlottesville, Virginia, which has a thriving food scene, but when I'm home visiting my family I generally don't make the trip into town. (Sorry, but there's Mom's chicken salad to be had.) But one trek I will get off the couch for is to the shop of chocolatier Tim Gearhart. Gearharts Chocolates are among the best I've had anywhere, so I was delighted to see that they've been adding to their offerings since my last visit. The latest I've sampled is their pistachio toffee: a square of salty, crunchy, stick-to-your-teeth candy that's full of bright green pistachios, then enrobed in cool, silky chocolate. Fortunately, they sell their treats online, so I won't have to wait for another trip back home to get my hands on them.
