Weekday Breakfasts

Weekdays are busy, but we think you deserve better than a quick bowl of cereal as you run out the door. Weekday breakfasts can be nourishing and exciting for the whole family with a tiny amount of planning ahead. A batch of healthy muffins baked over the weekend can last all week and are the perfect grab-and-go meal. Pancake or waffle batter can be made the night before and stored in the fridge overnight for quick cooking in the morning. For even faster prep, we love to cook a big batch of pancakes over the weekend and freeze leftovers for easy reheating during the week. Fruit compotes enliven a bowl of yogurt or oatmeal and can be refrigerated for several weeks. Try cooking extra potatoes for dinner and turning them into quick home fries the next morning with a simple sunny-side-up egg. Traditional Swiss muesli is best made the night before serving; with yogurt, nuts, fruit, and bran, it's healthier and more delicious than anything that comes in a box.
