Chomping at the Bit

Chomposaurus is quite simply a site about meat—everything from meat politics to, say, the best steak in San Francisco. However, what really caught our attention were the tags labeled "Know Your Cow," as well as other rubrics covering pork, sausage, and other ingredients and a feature the blog calls "Shady Meat." These posts comprise a primer of basic (and not so basic) cuts of meat ranging from the ubiquitous porterhouse steak to pork neck and sweetbreads. We especially liked the posts on Wagyu beef, which include some excellent links that dispel many of the falsehoods surrounding this unusual type of beef and explain why the real thing is often so difficult to find.
