MAKES 1

A bartender at the Pendennis Club in Louisville, Kentucky, invented this cocktail, ostensibly to mask the flavor of bourbon for a Civil War veteran and club member who didn't cotton to its flavor.

2 orange slices
2 maraschino cherries (stems removed)
2 dashes Angostura bitters
1/2 tsp. superfine sugar
2 1/2 oz. bourbon

1. Put 1 orange slice, 1cherry, bitters, 1 tsp. water, and sugar into an old-fashioned glass. Using a pestle or the back of a teaspoon, muddle the fruit and sugar until the fruit is a little mashed and the sugar has dissolved.

2. Add several ice cubes to the glass, then add bourbon. Stir gently and garnish with remaining orange and cherry.
